Recipe: Chicken Arroz Caldo


Hubby's sick, diagnosed with laryngitis (thus explaining his difficulty in swallowing). So I thought eating soft, smooth foods would help...


Ingredients:

olive oil
garlic, minced
onion, minced
ginger, minced
pepper
chicken thighs
ginisa flavor mix
water
chicken broth
rice, washed
fish sauce
boiled eggs
onion leeks, chopped

Procedure:

Saute garlic, onion, ginger and pepper in olive oil. Add chicken, stir-fry until brown. Season with ginisa flavor mix. Pour water and chicken broth, simmer until chicken is tender. Add rice, stirring occasionally, boil until it reaches a porridge like consistency. Add fish sauce to taste, mix well. Serve hot, boiled eggs and onion leeks on top.

Recipe: Crab in Sweet Chili Sauce

Ingredients:

olive oil
garlic, minced
onion, minced
ginger, minced
peppercorn, crushed
tomato sauce
sweet chili sauce
fish sauce
butter, unsalted
lemon juice
7-Up
crab, cut in half

Procedure:

Saute garlic, onion, ginger and pepper in olive oil. Add tomato sauce, sweet chili sauce, fish sauce, butter and lemon juice, mix well. Pour 7 Up, bring to boil. Add crab, simmer until cooked. Add more seasoning if needed.

Recipe: Shrimp Al Ajillo

Ingredients:

olive oil
balsamic vinegar
garlic, minced
chili flakes
salt
pepper
shrimp
butter, unsalted

Procedure:

Combine olive oil, vinegar, garlic, chili flakes, salt and pepper together in a large bowl. Add shrimp to marinade. Refrigerate overnight. Stir-fry in butter until shrimp are opaque and firm. Add more seasoning if needed.

Recipe: Squash Soup

Ingredients:

butter, unsalted
garlic, minced
onion, minced
squash, diced
beef/chicken stock
dried rosemary
nutmeg
salt
pepper
all-purpose cream

Procedure:

Saute garlic and onion in butter. Add squash, stir-fry until half cooked. Pour stock, enough to submerge solids. Season with rosemary, nutmeg, salt and pepper. Simmer until squash is tender. Mash and add cream.

Recipe: Peppery Shrimp Soba

Ingredients:

olive oil
garlic
onion
peppercorn, crushed
shrimp
ginisa flavor mix
peri-peri
asparagus
baby corn
bean sprout
bell pepper
egg noodles
oyster sauce

Procedure:

Cook egg noodles according to package directions. Drain and set aside.

Saute garlic, onion and pepper in olive oil. Add shrimps, stir-fry until shrimp are opaque and firm. Season with ginisa flavor mix and peri-peri. Add asparagus, baby corn, bean sprout, and bell pepper. Stir-fry until half cooked. Add cooked egg noodles. Add oyster sauce and mix well.

Recipe: Creamy Bacon Pasta

Ingredients:

olive oil
bacon
ham
mushroom
all-purpose cream
cheese, grated
mushroom, sliced
pasta, cooked al dente

Procedure:

Saute bacon, ham and mushroom in olive oil. Add cream and cheese. Simmer over low heat, stirring occasionally until cheese is melted.

Toss sauce with cooked pasta.

Recipe: Sinigang na Salmon sa Miso

Ingredients:

olive oil
garlic
onion
ginger
tomatoes
water
salmon
salt
chinese cabbage
siling-haba
sinigang sa miso mix

Procedure:

Saute garlic, onion and ginger in olive oil. Add tomatoes, stir-fry until cooked. Pour water, bring to boil. Add salt to taste. Add salmon, simmer until half cooked. Add chinese cabbage and siling-haba, simmer until cooked but still crisp. Add sinigang sa miso mix.
